Sushi Wedding Cake

Jef and Jin Yoon like Sushi -- a lot. We missed their wedding, but I promised them we'd have a festive reception for them in Boston when they got back from their honeymoon. Jef requested Sushi, which was neither a surprise nor a problem. I wanted to do something different, though, and a little more obviously wedding-y. Hence, the wedding Sushi cake.

Ingredients:
* 6 c raw short-grain rice, steamed, cooled, but not prepared with vinegar as for sushi (refrigerating the vinegared rice causes the texture to change and become undesirable)
* 1 1/4 pounds Sushi - grade salmon, cut into long nigiri-style slices
* 1 pound Sushi - grade yellowtail, 3/4 of it cut into long nigiri-style slices, the rest chopped and set aside
* 1 lb Sushi - grade tuna, 3/4 of it cut into long nigiri-style slices, the rest chopped and set aside
* 3/4 c tobiko
* 1/2 c wasabi tobiko
* 1 c ikura
* 1 block tamago, cut into stars, hearts, and crescents with canape cutters, scraps saved and minced
* 1 lb cooked shrimp, peeled, deveined, and minced
* 1 tbsp Korean hot pepper powder
* 1/2 tsp sugar
* 1/4 tsp salt
* 1 tbsp high-quality canola-oil mayo
* 1/2 seedless cucumber, partially peeled in decorative stripes, then sliced thinly into quarter- and semi-circles
* 2 c loosely packed mache leaves
* pickled ginger, drained and pressed into rosebud shapes

* 1 c cilantro, finely chopped
* 1 tbsp sesame oil
* 1 tsp fish sauce
* 1/4 tsp salt

* 1 tbsp inamona (kukui nut)
* 3 ripe avocadoes, all but one half mashed; reserved half thinly sliced the long way
* 1 tsp lemon juice

* heavy cans, jars, or other items to use as weights

* bride and groom cake toppers of your choice

Directions for 12-inch Tier:
* Form the tier from the bottom up, arranging cucumbers, tamago pieces, and edamame carefully on the plastic wrap in the pan in an attractive pattern.
* Lay the salmon slices on top, being careful not to disturb the first layer, like spokes of a wheel. Let the salmon come slightly up the sides of the pan.
* Mix 1/2 of the rice with the tobiko and press 1/2 of the resulting mixture into the pan, careful not to disarrange the salmon.

Deliciouss Sushi

Would you like to try Sushi? With the rise in popularity of sushi in western countries you may be invited by friends to join them at the local sushi bar. While you may be anxious about the prospect of eating anything raw, don't worry, all you need is a little bit of information to take the anxiety away from the experience and enjoy this wonderful delicacy.

Sushi is a very simple dish, although the making of it is considered an art form. The Itamae (sushi chef) traditionally needs to train for 10 years before being hired to prepare sushi. However, the popularity of sushi has forced the hiring of chefs with only a few years experience.

There are four main types of sushi you can order:

Nigiri sushi: nigiri means "grab". These are hand pressed balls of rice with raw fish on top and bit of wasabi between the fish and rice.

Sashimi: sliced raw fish (technically not sushi since the term sushi refers to the rice and sashimi is not prepared with any rice).

Maki sushi: maki means "roll". The maki sushi is rolled with bamboo mats. Traditionally the seaweed is on the outside; rice on the outside is called 'inside-out' (ie: California roll).

Temaki is a hand rolled version of Maki. It is cone shaped like an ice cream cone.

Sushi comes in an amazing variety of combinations, however you'll find these common ingredients or garnishes with nearly every version:

The word sushi actually refers to The rice, also called 'sticky rice'. Sushi rice is short grained and cooked with a 1:1 ratio of water. Sushi vinegar and sugar is added which makes the rice both sweet and tart.

Wasabi: Japanese horseradish. Often served as a green paste alongside your sushi as an additional condiment; a word of caution - wasabi is VERY hot, so use it sparingly while developing a taste for it.

Gari: Thinly sliced, pickled ginger is also served with sushi. Some use it as a garnish although it is technically to refresh your palette between bites.

Nori: The seaweed sheets used to roll rice for sushi.

Soya Sauce (Shoyu): used as a dipping sauce. The wasabi can also be mixed with the soya sauce for those who enjoy the intense flavor.

Sushi can be made with a single ingredient or several. Single ingredients include avocado, cucumber (kappa), tuna (tekka or maguro) or salmon (sake - but not the rice wine). There are also many modernized combinations designed to please American palettes. These include the California roll made with avocado, crab, and cucumber and the Philadelphia roll made with smoked salmon, cream cheese, and cucumber.

As you can see, despite the unusual presentation you can easily find identifiable and delicious combinations you are sure to enjoy. Despite what you may think, the nori (seaweed) has very little flavor and is nearly undetectable when combined with the flavors of the sushi and the addition of soya sauce or wasabi. In fact, like many other converts, you may just have found yourself a new addiction!

Racikan Soto Banjar

Rasa kuahnya gurih-gurih enak.

It's Kirin Seafood Restaurant!

Kirin Seafood Restaurant in New Westminster is probably the nicest looking Chinese restaurant that serves Dim Sum. The interior design is very modern. The dining area is big, it has high ceilings, and there is a lounge area for you to wait for your seats. And surprise, surprise, they have really nice restrooms! There’s always extra kudos for nice restrooms in a Chinese restaurant.

They have a good selection of Dim Sum dishes that also includes quite a few vegetarian ones. I really liked this particular dish there, which is fried dough wrapped in rice rolls, I liked this dish in general, but their fried dough is crispier than other places. I can usually order something here that I can’t find or wouldn’t order in other Dim Sum places because I haven’t tasted anything horrible here. So the last time I went I tried this deep fried taro with mushroom and meat stuffing dish. It looks really pretty and it taste really good too.

The the waiters were friendly, but the managers (the ones with suits) were not too attentive. It is hard to get their attention sometimes. And it is the managers that takes care of your bill, I waited a good 10 minutes to pay the last time I was there. That was too long for me, so I decided to save 5% from my tips. Speaking of bills, their Dim Sum average $3.50 – $4.00 per dish. Really pricey for Dim Sum.

Overall this is a very nice restaurant to eat in. If you are looking to bring a friend from out of town for Dim Sum, this would be a nice place to go to. (beipas - me plus food)

Chicken Fried Steak Dish

Chicken-fried Steak (also known as pan-fried Steak, country-fried Steak or CFS) is a dish consisting of a piece of Steak (tenderized cube steak) coated with seasoned flour and pan-fried. It is associated with Southern U.S. cuisine and hospitality. Its name is likely due to chicken-fried Steak's similarity in preparation to fried chicken, though the dish is also similar to the classic Austrian dish Wiener Schnitzel (known in Latin American cuisine as milanesa), a tenderized veal or beef cutlet, coated with flour, eggs, and breadcrumbs and fried. It is similar to the recipe for Scottish collops. It is generally categorized as a comfort food.

The precise origins of the dish are unclear, but many sources attribute its development to German and Austrian immigrants to Texas in the nineteenth century who brought recipes for Wiener Schnitzel from Europe to the USA. Lamesa, the seat of Dawson County on the Texas South Plains, claims to be the birthplace of chicken-fried steak, as does Bandera, Texas' favorite son, John "White Gravy" Neutzling.

The Virginia Housewife, published in 1838 by Mary Randolph has a recipe for veal cutlets that is one of the earliest recipes for a food like chicken-fried steak. The recipe for what we now know as chicken-fried steak was included in many regional cookbooks by the late nineteenth century. The actual term "chicken-fried Steak" was probably developed in the 1930s. It is possible that the name change for this recipe was due to the war with Germany.

A 1943 American Cookbook recipe for Wiener Schnitzel includes a white salt and pepper cream gravy.

Chicken-fried steak is among numerous popular dishes which make up the official state meal of Oklahoma, added to the list in 1988. (en.wikipedia)

Puas Makan di Hanamasa Banget!

Hanamasa selalu jadi kesukaan gue! Beberapa minggu lalu, pas hari minggu, gue sama beberapa temen gue akhirnya bales dendam makan di Hanamasa Bekasi. tongue
Kita akhirnya ketemuan langsung disana. Gue yang emang udah agak lama nggak kesana, masih inget sama interiornya. Nggak banyak berubah sama beberapa tahun lalu. Mbaknya yang selalu pake kimono pun mempersilakan kita masuk.

Sampe meja, gue langsung bilang sama mbaknya "Dua-duanya dinyalain aja ya mbak" maksud gue, pemanggang sama buat syabu-syabunya itu. Dan begitu mbaknya sibuk nyalain, gue sama temen-temen gue mulai bergerilya tongue

Untuk rasa, nggak terlalu berbeda kok sama yang beberapa tahun lalu terakhir gue kesana. Masih tetep enak dan makin banyak jenisnya. Syabu-syabu nya gue suka, Yakiniku nya jadi favorit gue, cemilan-cemilan lainnya itu gue juga suka. bowl
Untuk minumannya, gue suka yang Thai Tea. Rasanya agak ngingetin gue sama Teh Tarik kalo di restoran Aceh gitu. Enaaakk lol

Pokonya gue sukaaa banget sama Hanamasa. Salah satu restoran all you can eat yang paling gue suka dari dulu banget! Puaaaaasss chopstick (id.openrice.com)

Membuat Nasi Sushi

* 1 / 4 cangkir cuka beras
* 2 sendok makan gula
* 1 sendok teh garam

(I Make Sushi)

Sour Sally Meltz Jakartan's Heart

Sour Sally, the pioneer of the frozen yogurt business in Indonesia, continues to draw long lines of customers, despite the fact that it has opened its 10th outlet in just a single year. The yoghurt may have been frozen, but it is surely melting the hearts of Jakartans, with many willing to stand in line for this stylish and healthy new delight.

With the tagline: "Delicious doesn't have to be sinful", Sour Sally offers three flavors: original, green tea and pinklicious (strawberry). These basic three can be mixed together as a "twist" flavor.

Sliced fruits, including strawberry and peach, as well as more indulgent sweets, such as chocolate chips and Oreo cookies can be had to top off these creamy goodies. Besides frozen yogurt, Sour Sally also offers smoothies and shaved ice, which can be had as the base of your frozen yogurt treat.

On its first anniversary, Sour Sally launched a new menu item, the Pinklicious Waffle, a waffle with frozen yogurt and a choice of three toppings.

"We will continue to develop other new menu items," Donny Pramono, owner of Sour Sally, said.

Sour Sally offers free wi-fi internet connection and plays the latest pop hits to attract its young target consumer base.
A newcomer to the frozen yogurt business is Heavenly Blush, which has just opened its second outlet in Mall Kelapa Gading 3. With the slogan "Guiltlessly satisfied", Heavenly Blush was established in late 2008.

Managing Director of Heavenly Blush Dien Kwik said that his business is focused on its core: health food.

"We want to promote healthy food, healthy lifestyles. That's why we have sugar free yogurt. Our yogurt also contains symbiotics, which are very good for health," Dien, who also works for health food producer Nutrifood, said.

Susana, head of the Nutrifood Research Center, said that the symbiotic in Heavenly Blush are combination of probiotics and prebiotics, which synergize the immune system and benefit digestion.
Probiotics are living microorganisms that can benefit digestive health. Probiotics can stimulate the activity of the colon.

Besides the sugar-free yogurt, Heavenly Blush also offers their original classic as well as seasonal pomegranate and peach flavors. Twist flavors are also available. Heavenly Blush also serves smoothies.
According to Susana, dairy products are not traditionally consumed here, as most Asian people are lactose intolerant. But, she added, yogurt is the best dairy product, because the bacteria in the yogurt is good for daily consumption.

Whichever frozen yogurt store you choose, they will surely satisfy your taste-buds as well as your conscience. (Tifa Asrianti, The Jakarta Post)

Sate Landak dari Gunung Lawu

Pernah mencoba Sate Landak?

Rasanya?

Tak ayal, semakin lama peminat Sate landak terus bertambah. Bahkan, tak hanya dilirik wisatawan nusantara, tetapi sejumlah wisatawan mancanegara pun terpesona rasa menu eksentrik itu. “Apalagi khasiat daging landak juga banyak sekali,” tutur pemilik warung Gunung Lawu spesial penyedia Sate landak, Jl Tawangmangu Matesih km 2, Sukatno.

What is Dim Sum?

Dim Sum is an integral part of Chinese cuisine, closely associated with the tradition of yum cha, or taking tea. Dim Sum means "small heart", suggestive of a small snack that touches the heart. Dim Sum can be found all over China and in many parts of the West, where Dim Sum is a popular meal. Dim Sum is usually served in the late morning through the early afternoon, although some Dim Sum establishments are open later. It is a meal that should be lingered over, in multiple courses that traditionally have a set order.

Dim Sum is an umbrella category for small Chinese dishes. Typical examples of Dim Sum are small dumplings, wrapped foods such as won tons and egg rolls, and other more exotic foods. In general, individual portions of Dim Sum are small, so that numerous dishes can be ordered and sampled by the table. Most Dim Sum falls under the category of a savory pastry, although these foods can be prepared in a variety of ways. Dim Sum can be steamed, fried, boiled, baked, or broiled, and this wide range of options makes for a lively and varied meal.

Usually, Dim Sum is served from rolling carts, which makes it markedly different from Western foods. In a Dim Sum restaurant, servers wheel out fresh trays of delicacies and tables can take what they please. A specific type of dish is used for each food, so that at the end of the meal, the staff can add up all the dirty dishes to determine how much should be charged. Eating traditional Dim Sum is like grazing, and it encourages diners to linger and nibble, sometimes for hours.

Most restaurants have a dazzling array of Dim Sum available, with large establishments offering over 100 different varieties of food that change from day to day. The chef is given a great deal of leeway to create whatever he or she pleases, depending on seasonal availability and what he or she thinks is auspicious for that day.

Some classic examples of Dim Sum include har gow, small steamed dumplings with shrimp and water chestnuts. Consumers can also often find siu may, open faced pork dumplings with chives. Steamed buns filled with a variety of things, from barbecued pork to vegetables, are also extremely popular. Many restaurants also make sweet steamed buns, filled with things like red bean paste, sesame, or lotus root. More exotic offerings such as chicken feet or shrimp wrapped in bean curd skin can often be found as well. Dim Sum is a culinary adventure, and the small dishes are often inexpensive, which encourages people to try new things.(S.E. Smith - Wise Geek)
